Winter is coming....
Its going to snow this weekend . Summer seems to have gone on since early April. The past week I've been warming up the truck and driving in. Changed the oil on the motorcycle, put stabil in the gas. Did some Christmas shopping. Feeling a little bit ahead of the curve this time....
Brewing two new beers, an IPA and a Red. Moved the red to a secondary fermenter and it will be ready to bottle on Sunday. The IPA takes a week longer in the fermenter. I bought two cases of nice vintage swing top Grolsch bottles with ceramic tops and replaced all the gaskets. Will be nice at the holiday party to have fresh home made beer in fancy bottles.
I got a 32 pound jug of Munich Malt Extract for a very good price. I think I'll be making a Kolsch next. Looking for recipe suggestions.

Having a fun week at work, Spent the past week using Java / Hibernate and JFreeChart to graph sensor readings. Im temporarily jumping out of the low-level Embedded Firmware stuff and into the UI Jungle. Working with some cool new dev tools: Karma, Jasmine, Yarn, and Angular.
Using VS Code as an editor for TypeScript / JavaScript / HTML
Excited to be freshening up my HTML / UI chops after a long stretch of over the air protocols, SNMP Agent internals and kernel module bug fixing.
Jasmine is a test suite I'm working with, Yarn is a dependency management tool.

Brewing notes
My co worker grows his own hops, and we harvested a 5 gallon bucket full of beautiful cones that smell delicious. We harvested the fresh hops and let it dry for a week on the porch.
Since I've been enjoying Old Brown Dog and Sam Smiths lately, I decided to make a brown ale. I used 6.6 pounds of light LME, and 1 pound of light DME, a mix of 60L and Chocolate malt, and 1oz of Cascade hops for bittering. Safale S04 yeast.
I used the fresh hops at the end of the brew for aroma. I steeped it for 10 minutes at the end of the recipe.
After 3 weeks in the fermenter and 10 days in the bottle I tried it. Its a little bit sweeter than I would like, but its very drinkable. I am hoping that another week or 2 in the bottles might reduce some of the sweetness. The hopping at the end was a good idea, but it doesnt taste like it smells, and I may use the hops a little earlier on in the recipe next time.
Brown Ales are typically not hopped heavily and I didnt want to overdo it. It seems to be a delicate balance with the hops, and the non-fermetable crystal malts in the sweetness.
In my next Brown ale I am going to use Biscuit, Amber, and Chocolate Malt, and skip the 60L Crystal malt completely.

How Crystal Malt is Made
Crystal malts are made from barley grain in a process similar to that of making pale malts. As with pale malts, the grains are steeped and germinated. Unlike pale malts, crystal malts are then stewed — they are heated in a closed system that doesn’t allow moisture to escape. As a result, the starch interiors of the barley grains are broken into sugars by amylase enzymes in the barley. After stewing, the grains are kilned. Kilning dries the grain, darkens the husk and caramelizes some of the sugar inside.

January 2017 -
Happy New Year.
I've been working on some new guitar songs and playing out more. I recently picked up a new Gretsch Hollow body guitar, but still prefer to play my acoustic. Today I didnt even get dressed until it was time to go out and shovel snow, I just played thru all my songs and watched the world out the window. This year I resolve to play with other musicians as often as I can and seriously add to my repertoire
The New Stuff:
Tracy Chapman - Give me one reason
Spin Doctors - Two Princes
Neil Yong - Heart of Gold
Hallelujia - Leonard Cohen / Jeff Buckley
Stuff Im playing out pretty regularly
Nobody Knows You When You're Down and Out - Blues Standard / Eric Clapton
Friend of the Devil - Dead and many others
Down By The Water - Decemberists
Bad Moon Rising - CCR
Pills - Hank III
Melissa - Allman Brothers
Some of the local open mic's Ive been playing at.
Chit Chat Lounge Haverhill - Tuesdays
Coffee Coffee Salem NH - Wednesdays
Lakeside Tavern - Thursdays
