Brew Update. Been brewing a lot.
Decided to brew beer for a few large events I run over the summer. Worked out some Brown Ale, Pale Ale, and Czech Budvar style recipes.
bought Malt in Bulk. Got some liquid and some Dry. Shipping is expensive.

Holiday Brick Warmer Red
Brewed several Brown Ales with a variety of hops and malt substitutions . My basic recipe is 7 pounds of Malt, One Ounce of Hops, and 1 pound of grains. Some recipes Ive used 2 pounds of grains for a really dark and malty body.
I really like the dryer, toastier browns, rather than the sweet browns. 1 pound of grains split Chocolate / Biscuit / Amber is really nice. Replace a pound of Malt with Brown Sugar. Fuggle / Kent Goldings are similar. Challenger and Northdown make a spicy brown. Cascade is too intense.
Aging:
Letting the beer sit for a 6-8 weeks helps the sweetness dry out. The Budvar Recipe took a while to carbonate, but in 10 weeks it had mellowed considerably and all bottles were nice and fizzy.
